These Raw Food 'on the go energy' Muesli bars/cookies are ideal for everyone in the family!
Taj loved making them and getting to use the dehydrator. Dehydrators are great kitchen tools, especially with kids- they are usually used up to 4o degrees (no chance of nasty burns) so little ones can help during the entire cooking process. They also use as much energy as a light globe, quite energy efficient!
Recipe;
Add or minus ingredients to your own taste or nutritional needs :) (Excuse the iPhone pics, my camera had a little sky diving accident... without a parachute!)
*easier to blend in a few small batches as this makes a lot of bars and won't all fit in a thermomix... you could half the recipe if you like but they last ages, if you hide them that is... they will get eaten quickly if you are like our family!
1/4 cup macs powder 1/2 cup of soaked & rinsed brazil nuts 1/2 cup flax 1/2 cup of cacao nibs 1/2 cup of soaked & rinsed walnuts/pecans 1 vanilla bean (the scraped out inside part only) 5 cups of almond pulp- left over from making almond milk (fresh or frozen) 3 cups of soaked & rinsed cashews 1 cup of goji berries soaked for 10 mins Zest of 1 lemon 2 cups of raw honey BLEND in thermomix/vitamix until well combined
Put in your dehydrator for 12 hours on 39. If you don't have one, put them in your oven on 39 degrees
